Did you know that January is National Oatmeal Month?!
Oatmeal doesn't just need the month of January because I, for one, celebrate oatmeal all year round. I love the stuff!
I love it because it's so versatile; it is a blank canvas for your taste buds! You can have it sweet or savory and you can have it hot or cold. My favorite way to eat it as of late has been cold icebox oatmeal in a jar with simple ingredients.
The following recipe is a dairy free version that I found here. (If you want dairy, replace almond milk with 1/3 cup of your favorite yogurt and 1/4 cup of milk.)
The jar ingredients for the oatmeal need to sit in your fridge overnight for at least 8 hours. I like to make it before I go to bed so I can enjoy it for breakfast. It's also such a yummy and cool treat after a good workout at the gym. (Of course, you can heat it up in the microwave, too!) I like to top the oatmeal off with honey, raisins, and chopped almonds because I usually always have those ingredients around. Icebox oatmeal only seems to last in the fridge for no more than 2 days. I personally wouldn't leave them for more than 24 hours.
